Vegetarian Chili

Ingredients:

1 lb soy chorizo

1 large onion diced

1 red, yellow, and orange bell pepper diced

1 can (15oz) diced tomatoes

2 green bell peppers diced

1 can black beans, kidney beans, chili beans

2 large cloves garlic minced

1 tablespoons chili powder

2 teaspoon cumin

1/2 teaspoon red chili flakes

1 teaspoon Mexican oregano



Instructions:

Brown chorizo in 2 tablespoons oil. Add onions and sweat for 2-4 minutes. Add peppers and cook for 5-7 minutes, add spices and cook for another 5 minuets. Add can of tomatoes. Add beans and other spices last. Cook on medium low for 30-40 minutes to boil down liquids. Salt and Pepper to taste and serve with your favorite herb.


*Add 1 lb ground beef to chorizo for non -plant based diet
